Preparation Steps
  1. Blend the base ingredients by combining shallot, garlic, long red chillies, and half of the cherry tomatoes in a blender until smooth.
  2. Prepare the jam mixture in a saucepan with the remaining cherry tomatoes, the puréed mixture, lime zest, light brown sugar, and red wine vinegar.
  3. Set the saucepan over medium-high heat and stir until the sugar dissolves completely.
  4. Bring the jam mixture to a rolling boil, then reduce to a steady simmer, cooking for 25-30 minutes while stirring frequently.
  5. Adjust the consistency by stirring regularly for the last 10 minutes, ensuring the jam thickens evenly.
  6. Cool and jar the jam into sterilized jars, sealing them tightly, and allow to cool completely.
