Light, crisp, and packed with flavor, this Sweet and Tangy Asian Cucumber Salad is the perfect quick side dish. Ready in just 10 minutes, it combines fresh cucumbers with a savory, tangy, and slightly spicy dressing that will tantalize your taste buds.

Ingredients

Main Ingredients:

  • 5 Persian cucumbers
  • ½ tsp salt

For the Dressing:

  • ½ tbsp sesame oil
  • ¾ tbsp light soy sauce
  • 1 tbsp sugar
  • ¾ tbsp rice vinegar
  • 1 tbsp chili oil
  • ½ tbsp sesame seeds

Instructions

  • Prepare the Cucumbers:
    • Wash the cucumbers thoroughly. Slice them at an angle to create oval-shaped pieces.
  • Salt the Cucumbers:
    • Toss cucumber slices with salt in a large bowl. Let sit for 20 minutes to draw out excess moisture.
  • Rinse and Dry:
    • Rinse the cucumbers under cold water to remove excess salt. Pat dry with a clean towel or paper towel.
  • Make the Dressing:
    • In a small bowl, combine sesame oil, soy sauce, sugar, rice vinegar, chili oil, and sesame seeds. Mix until sugar dissolves.
  • Combine and Toss:
    • Pour the dressing over the cucumbers and toss gently until all slices are evenly coated.
  • Serve:
    • Transfer the salad to a serving dish and garnish with additional sesame seeds if desired. Serve immediately.

Notes

  • Adjust the spice level by increasing or decreasing the chili oil.
  • For added crunch, top with roasted peanuts or fried shallots.
