Prepare the Cucumbers:
- Wash the cucumbers thoroughly. Slice them at an angle to create oval-shaped pieces.
Salt the Cucumbers:
- Toss cucumber slices with salt in a large bowl. Let sit for 20 minutes to draw out excess moisture.
Rinse and Dry:
- Rinse the cucumbers under cold water to remove excess salt. Pat dry with a clean towel or paper towel.
Make the Dressing:
- In a small bowl, combine sesame oil, soy sauce, sugar, rice vinegar, chili oil, and sesame seeds. Mix until sugar dissolves.
Combine and Toss:
- Pour the dressing over the cucumbers and toss gently until all slices are evenly coated.
Serve:
- Transfer the salad to a serving dish and garnish with additional sesame seeds if desired. Serve immediately.
Notes
- Adjust the spice level by increasing or decreasing the chili oil.
- For added crunch, top with roasted peanuts or fried shallots.
