Ingredients
For the Cookies:
- 2 1/2 cups all-purpose flour (315 g)
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened (170 g)
- 1 cup granulated sugar (200 g)
- 1/2 cup eggnog (120 ml)
- 1 large egg
- 1 teaspoon vanilla extract
For the Glaze (Optional):
- 1 cup powdered sugar (120 g)
- 2–3 tablespoons eggnog
- A pinch of ground nutmeg for garnish
Instructions
- Prepare the Dough:
- In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2–3 minutes.
- Beat in the egg, eggnog, and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
- Shape and Bake:
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized portions of dough and roll into balls. Place the dough balls 2 inches apart on the prepared baking sheets.
- Bake for 10–12 minutes, or until the edges are set and the cookies are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Glaze the Cookies (Optional):
- In a small bowl, whisk together the powdered sugar and eggnog until smooth.
- Drizzle or spread the glaze over the cooled cookies. Sprinkle with a pinch of nutmeg for garnish.
Notes
- Chilling the dough prevents the cookies from spreading too much during baking.
- Adjust the nutmeg to your taste for a stronger or milder spiced flavor.
- If you prefer your cookies less sweet, skip the glaze—they’re delicious on their own!
