Ingredients
  

For the Cookies:
  • 2 1/2 cups all-purpose flour 315 g
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened (170 g)
  • 1 cup granulated sugar 200 g
  • 1/2 cup eggnog 120 ml
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Glaze (Optional):
  • 1 cup powdered sugar 120 g
  • 2 –3 tablespoons eggnog
  • A pinch of ground nutmeg for garnish

Method
 

Prepare the Dough:
  1. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  2. In a large mixing bowl, cream the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2–3 minutes.
  3. Beat in the egg, eggnog, and vanilla extract until fully incorporated.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
Shape and Bake:
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Scoop tablespoon-sized portions of dough and roll into balls. Place the dough balls 2 inches apart on the prepared baking sheets.
  3. Bake for 10–12 minutes, or until the edges are set and the cookies are lightly golden.
  4. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Glaze the Cookies (Optional):
  1. In a small bowl, whisk together the powdered sugar and eggnog until smooth.
  2. Drizzle or spread the glaze over the cooled cookies. Sprinkle with a pinch of nutmeg for garnish.

Notes

  • Chilling the dough prevents the cookies from spreading too much during baking.
  • Adjust the nutmeg to your taste for a stronger or milder spiced flavor.
  • If you prefer your cookies less sweet, skip the glaze—they’re delicious on their own!
