Ingredients

For the Beef and Potatoes:

  • 1 1/2 pounds beef stew meat (cut into bite-sized pieces)
  • 1 pound baby potatoes, halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Garlic Butter Sauce:

  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth

Optional Garnish:

  • Fresh parsley, chopped

Instructions

  1. Prepare Ingredients:
    • Cut the beef into bite-sized pieces and halve the baby potatoes for even cooking.
  2. Sear the Beef:
    • Heat olive oil in a large skillet over medium-high heat. Add the beef bites and sear on all sides for 2-3 minutes per side until browned. Remove the beef and set aside.
  3. Season the Potatoes:
    • Toss the halved potatoes with olive oil, salt, and black pepper. Place them in a single layer in the skillet and cook for 5-7 minutes, stirring occasionally, until they start to crisp up.
  4. Prepare the Garlic Butter Sauce:
    • In a small bowl, combine melted butter, minced garlic, onion powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper. Stir until well mixed.
  5. Combine and Cook:
    • Add the seared beef back to the skillet with the potatoes. Pour the garlic butter sauce over the beef and potatoes, ensuring they are evenly coated.
    • Pour in the beef broth and stir gently.
  6. Simmer:
    • Cover the skillet and let everything cook over medium heat for 15-20 minutes, stirring occasionally, until the beef is tender and the potatoes are fully cooked.
  7. Garnish and Serve:
    • Remove from heat and garnish with freshly chopped parsley. Serve immediately and enjoy!
