Method
Prepare Ingredients:
- Cut the beef into bite-sized pieces and halve the baby potatoes for even cooking.
Sear the Beef:
- Heat olive oil in a large skillet over medium-high heat. Add the beef bites and sear on all sides for 2-3 minutes per side until browned. Remove the beef and set aside.
Season the Potatoes:
- Toss the halved potatoes with olive oil, salt, and black pepper. Place them in a single layer in the skillet and cook for 5-7 minutes, stirring occasionally, until they start to crisp up.
Prepare the Garlic Butter Sauce:
- In a small bowl, combine melted butter, minced garlic, onion powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper. Stir until well mixed.
Combine and Cook:
- Add the seared beef back to the skillet with the potatoes. Pour the garlic butter sauce over the beef and potatoes, ensuring they are evenly coated.
- Pour in the beef broth and stir gently.
Simmer:
- Cover the skillet and let everything cook over medium heat for 15-20 minutes, stirring occasionally, until the beef is tender and the potatoes are fully cooked.
Garnish and Serve:
- Remove from heat and garnish with freshly chopped parsley. Serve immediately and enjoy!
Notes
- For extra crispy potatoes, broil them in the oven for 5 minutes before serving.
- Add vegetables like carrots or green beans for a more balanced dish.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, use a skillet over low heat to preserve the texture and flavors.
