Ingredients
  

For the Beef and Potatoes:
  • 1 1/2 pounds beef stew meat cut into bite-sized pieces
  • 1 pound baby potatoes halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Garlic Butter Sauce:
  • 4 tablespoons unsalted butter melted
  • 3 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth
Optional Garnish:
  • Fresh parsley chopped

Method
 

Prepare Ingredients:
  1. Cut the beef into bite-sized pieces and halve the baby potatoes for even cooking.
Sear the Beef:
  1. Heat olive oil in a large skillet over medium-high heat. Add the beef bites and sear on all sides for 2-3 minutes per side until browned. Remove the beef and set aside.
Season the Potatoes:
  1. Toss the halved potatoes with olive oil, salt, and black pepper. Place them in a single layer in the skillet and cook for 5-7 minutes, stirring occasionally, until they start to crisp up.
Prepare the Garlic Butter Sauce:
  1. In a small bowl, combine melted butter, minced garlic, onion powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper. Stir until well mixed.
Combine and Cook:
  1. Add the seared beef back to the skillet with the potatoes. Pour the garlic butter sauce over the beef and potatoes, ensuring they are evenly coated.
  2. Pour in the beef broth and stir gently.
Simmer:
  1. Cover the skillet and let everything cook over medium heat for 15-20 minutes, stirring occasionally, until the beef is tender and the potatoes are fully cooked.
Garnish and Serve:
  1. Remove from heat and garnish with freshly chopped parsley. Serve immediately and enjoy!

Notes

  • For extra crispy potatoes, broil them in the oven for 5 minutes before serving.
  • Add vegetables like carrots or green beans for a more balanced dish.
