Cut the green stems off the strawberries to create a flat base. Slice the top third of each strawberry to form the “hat.” Set the tops aside and place the strawberry bases on a plate. - Mix the Filling:
In a mixing bowl, combine the whipped cream cheese, powdered sugar, and vanilla extract. Beat until the mixture is smooth and fluffy. - Pipe the Filling:
Transfer the cream cheese mixture into a piping bag or a zip-top bag with a small corner snipped off. Pipe a small dollop onto the flat surface of each strawberry base to form the “face.” Then, pipe a larger dollop for the “beard.” - Assemble the Santas:
Place the strawberry tops back onto the filling to form the “hat.” Pipe a small dot on the tip of each hat for the pom-pom. - Finishing Touches:
