Ingredients

For the Crust:

  • 20 Golden Oreos, crushed (about 2 cups)
  • 5 tablespoons unsalted butter, melted

For the Strawberry Crunch Topping:

  • 10 Golden Oreos, crushed
  • ½ cup freeze-dried strawberries
  • 4 tablespoons unsalted butter, melted

For the Strawberry Cheesecake Layer:

  • 8 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 tablespoon strawberry gelatin powder
  • ½ cup fresh strawberries, diced

For the Plain Cheesecake Layer:

  • 8 ounces cream cheese, softened
  • ⅓ cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Golden Oreo Crust:
    • Crush 20 Oreos into fine crumbs and mix with 5 tablespoons of melted butter.
    • Press the mixture evenly into the bottom of a baking dish or individual jars. Set aside.
  • Make the Strawberry Crunch Topping:
    • Combine 10 crushed Oreos, freeze-dried strawberries, and 4 tablespoons of melted butter in a bowl. Stir until well mixed and set aside.
  • Strawberry Cheesecake Layer:
    • Beat softened cream cheese and sugar in a bowl until smooth.
    • Whip heavy cream to stiff peaks in a separate bowl and fold it into the cream cheese mixture.
    • Add strawberry gelatin powder and diced strawberries. Fold gently to combine.
    • Spread or pipe the mixture evenly over the crust.
  • Plain Cheesecake Layer:
    • Beat softened cream cheese and sugar until smooth.
    • Whip heavy cream with vanilla extract until stiff peaks form, then fold it into the cream cheese mixture.
    • Spread or pipe this layer over the strawberry cheesecake layer.
  • Add the Strawberry Crunch Topping:
    • Sprinkle the strawberry crunch mixture evenly over the top, gently pressing it down to adhere.
  • Chill and Serve:
    • Cover and refrigerate for at least 2 hours or until the layers are firm.
