Description

Juicy grilled chicken skewers are slathered in a creamy, spicy bang bang sauce for the ultimate low-carb flavor explosion. These skewers are perfect for meal prep, BBQ nights, or whenever you’re craving something bold, saucy, and satisfying.


Ingredients

For the Chicken Skewers:
1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
1 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika Salt and pepper, to taste Bamboo or metal skewers

For the Bang Bang Sauce:
½ cup mayonnaise (avocado oil-based preferred for low carb)
2 tbsp sugar-free sriracha or hot sauce
1 tbsp rice vinegar
1 tbsp powdered erythritol (or any low-carb sweetener)
1 tsp garlic powder


Instructions

  • In a large bowl, combine the chicken pieces with olive oil, garlic powder, smoked paprika, salt, and pepper. Cover and refrigerate for at least 30 minutes to marinate.

  • If using bamboo skewers, soak them in water for 30 minutes. Thread the marinated chicken onto skewers.

  • Preheat a grill or grill pan over medium-high heat. Grill chicken skewers for 4–5 minutes per side, or until nicely charred and cooked through.

  • While the chicken is cooking, whisk together all ingredients for the bang bang sauce in a small bowl until smooth and creamy.

 

  • Drizzle the sauce over the grilled chicken skewers or serve it on the side for dipping. Garnish with sliced green onions or sesame seeds if desired.

Notes

  • For extra heat, add more sriracha or a dash of crushed red pepper flakes to the sauce.

  • Chicken thighs offer more juiciness, but breasts work well for a leaner option.

  • These skewers can be cooked in an air fryer at 400°F for 12–14 minutes, flipping halfway through.
