Ingredients
  

  • For the Chicken Skewers: 1.5 lbs boneless skinless chicken thighs or breasts, cut into 1-inch cubes 1 tbsp olive oil 1 tsp garlic powder 1 tsp smoked paprika Salt and pepper, to taste Bamboo or metal skewers For the Bang Bang Sauce: ½ cup mayonnaise (avocado oil-based preferred for low carb) 2 tbsp sugar-free sriracha or hot sauce 1 tbsp rice vinegar 1 tbsp powdered erythritol (or any low-carb sweetener) 1 tsp garlic powder

Method
 

  1. In a large bowl, combine the chicken pieces with olive oil, garlic powder, smoked paprika, salt, and pepper. Cover and refrigerate for at least 30 minutes to marinate.
  2. If using bamboo skewers, soak them in water for 30 minutes. Thread the marinated chicken onto skewers.
  3. Preheat a grill or grill pan over medium-high heat. Grill chicken skewers for 4–5 minutes per side, or until nicely charred and cooked through.
  4. While the chicken is cooking, whisk together all ingredients for the bang bang sauce in a small bowl until smooth and creamy.

  6. Drizzle the sauce over the grilled chicken skewers or serve it on the side for dipping. Garnish with sliced green onions or sesame seeds if desired.

Notes

  • For extra heat, add more sriracha or a dash of crushed red pepper flakes to the sauce.
  • Chicken thighs offer more juiciness, but breasts work well for a leaner option.
  • These skewers can be cooked in an air fryer at 400°F for 12–14 minutes, flipping halfway through.
