  • 2 cups cooked chicken breast shredded or chopped1 can (15 oz) black beans, rinsed and drained1 cup corn kernels (fresh, canned, or thawed frozen)1 red bell pepper, diced1/4 cup red onion, finely chopped1 avocado, diced1/2 cup cherry tomatoes, halved1/4 cup fresh cilantro, chopped1/3 cup shredded cheddar or Mexican blend cheese1/4 cup sour cream or Greek yogurt (for the dressing)2 tablespoons lime juice1 tablespoon olive oil1 teaspoon ground cumin1/2 teaspoon chili powderSalt and pepper, to tasteOptional: tortilla strips or crushed tortilla chips for crunch

  3. Dress the Salad: Pour the prepared dressing over the ingredients and gently toss everything together until well coated.
