Prepare the Filling:
- In a medium bowl, beat together cream cheese, sour cream, salsa, lime juice, and taco seasoning until smooth.

- Stir in crumbled chorizo, chopped olives, green chilies, shredded cheddar cheese, and green onions. Mix until evenly combined.
Spread and Roll:
- Lay a tortilla flat on a clean surface. Spread about ½ cup of the filling evenly over the tortilla, leaving a ½-inch border. Roll the tortilla tightly.
Chill:
- Wrap each rolled tortilla in plastic wrap and refrigerate for at least 4 hours or overnight.
Slice and Serve:
- Remove the wraps and slice each roll into 1-inch pinwheels. Arrange on a platter and serve with salsa, guacamole, or sour cream for dipping.
