  1. Preheat your wood oven to 500–550°F (260–290°C) and wait for the flames to create a steady heat.
  2. On a lightly floured surface, roll each of the four dough balls into 8–9 inch circles.
  3. In a mixing bowl, combine ricotta cheese, mozzarella, Parmesan, minced garlic, and Italian seasoning until well mixed.
  4. Spread 2–3 tablespoons of marinara or pizza sauce onto one half of each dough circle, then add the cheese mixture.
  5. Fold the dough over to create a half-moon shape and crimp the edges to seal.
  6. Dust a pizza peel with flour or semolina, place calzones onto it, and bake for about 6–8 minutes.
  7. Brush with olive oil after baking, allow to cool slightly, and serve with warm marinara.
