Step-by-Step Instructions for Wood-Fired Calzones
- Preheat your wood oven to 500–550°F (260–290°C) and wait for the flames to create a steady heat.
- On a lightly floured surface, roll each of the four dough balls into 8–9 inch circles.
- In a mixing bowl, combine ricotta cheese, mozzarella, Parmesan, minced garlic, and Italian seasoning until well mixed.
- Spread 2–3 tablespoons of marinara or pizza sauce onto one half of each dough circle, then add the cheese mixture.
- Fold the dough over to create a half-moon shape and crimp the edges to seal.
- Dust a pizza peel with flour or semolina, place calzones onto it, and bake for about 6–8 minutes.
- Brush with olive oil after baking, allow to cool slightly, and serve with warm marinara.
