  • 1 tablespoon Cumin Adjust to taste.
  • 1 teaspoon Chipotle Powder Adjust to taste.
  • 1 teaspoon Smoked Paprika Adjust to taste.
For the Sauce
  • 1 cup Tomato Sauce/Canned Tomatoes Substitute with crushed tomatoes or salsa.
  • 1 tablespoon Olive Oil Can be replaced with vegetable broth.
  • 2 tablespoons Lime Juice Fresh lime is best.
For the Tortillas
  • 8 pieces Tortillas Use whole wheat or corn; warm before rolling.

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C) and gather your ingredients.
  2. In a skillet over medium heat, add olive oil and heat for about 1 minute. Add chopped onions and minced garlic, sauté for 3-5 minutes until translucent.
  3. Add diced bell peppers and cook for an additional 3 minutes. Mix in cooked lentils, spices, and tomato sauce. Simmer for 10 minutes.
  4. Warm tortillas in a skillet or microwave for about 30 seconds.
  5. Lay a tortilla flat, spoon the lentil mixture in the center, and roll up, placing seam-side down in a baking dish.
  6. Pour remaining tomato sauce over the enchiladas. If desired, sprinkle vegan cheese on top.
  7. Bake in preheated oven for 20-25 minutes until heated through and edges are crispy.
  8. Let rest for 5 minutes before serving, garnishing with fresh lime juice or toppings of choice.
