Assemble the Sandwiches
Lay out the 4 slices of sourdough bread on a flat surface.
Spread ½ tablespoon of honey mustard on each slice of bread.
Layer the Ingredients
Place one slice of cheddar cheese on two pieces of bread.
Add 2 slices of turkey on top of the cheese.
Layer thinly sliced tomato and ¼ cup of fresh spinach on top of the turkey.
On the remaining two slices of bread, place 2 strips of cooked bacon on top of the cheese.
Close the Sandwiches
Combine the sandwich halves by placing the bacon-topped slices (cheese side down) onto the turkey-topped slices.
Each sandwich should have the following layers: bread, honey mustard, cheese, turkey, tomato, spinach, bacon, cheese, honey mustard, and bread.
Grill the Sandwiches
Heat a large skillet over medium heat.
Spread a thin layer of softened butter on the outside of each sandwich.
Place the sandwiches in the skillet and cook for 3–4 minutes on each side, or until the bread is golden brown and the cheese is melted. Use a spatula to gently press the sandwiches down for even grilling.
Serve and Enjoy
Remove the sandwiches from the skillet and let them cool for a minute.
Slice in half if desired and serve warm.
Pair with chips, soup, or a salad for a complete meal.
