- In a small bowl, combine mayonnaise, sour cream, and yellow mustard. Whisk until smooth and creamy. Chill in the fridge.
- Slice the focaccia bread into halves and optionally toast for 2–3 minutes. Slice avocado, tomato, and red onion thinly. Pull apart rotisserie chicken.
- Spread the mustard mayo sauce on both sides of one half of the focaccia. Layer provolone, pulled chicken, bacon, lettuce, tomato, onion, and avocado. Season with salt and pepper.
- Top with the other half of focaccia. Slice in half and serve immediately.
