Method
 

Preparation
  1. Activate Yeast (optional): Dissolve yeast in warm milk with a pinch of sugar, letting it froth for about 10 minutes.
  2. Mix Dough: Combine all-purpose flour, sugar, salt, instant yeast, mashed ube, egg, warm milk, melted butter, and vanilla extract. Mix until a soft dough forms.
  3. First Rise: Shape dough into a ball, cover with a damp cloth, and let rise in a warm area for about 1 hour.
  4. Make Filling: Mix cream cheese, shredded cheddar cheese, and powdered sugar in a bowl until smooth.
  5. Shape Rolls: Punch down the risen dough, divide into 12 pieces, fill with cheese filling, and seal.
  6. Coat: Roll each sealed Ube Cheese Pandesal in breadcrumbs.
  7. Second Rise: Cover with a cloth and let rest for another 30 minutes.
  8. Bake: Preheat oven to 350°F (175°C) and bake for 18-20 minutes until golden brown.
  9. Finish: Brush with melted butter if desired and let cool slightly before serving.
