Ingredients
  

  • 3 cups cooked rice preferably day-old
  • 2 cups cooked turkey shredded or diced
  • 1 cup mixed vegetables peas, carrots, corn
  • 2 tablespoons vegetable oil
  • 3 green onions chopped
  • 2 cloves garlic minced
  • 2 eggs beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Method
 

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are heated through.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them with the vegetables.
  4. Add the cooked rice and turkey to the skillet. Pour the soy sauce and sesame oil over the mixture. Stir everything together and cook for an additional 3-4 minutes, allowing the rice to heat through and absorb the flavors.
  5. Stir in the chopped green onions, and season with salt and pepper to taste. Cook for another minute, then remove from heat.
