- Preheat your oven to 425°F (220°C). Prepare a roasting pan.
- Rinse the Cornish hens under cold water and pat them dry. Tuck the wings back and tie the drumsticks.
- Line the pan with onions, carrots, and potatoes. Drizzle with olive oil and season with salt and pepper.
- Combine the herb mixture ingredients in a bowl. Slowly stir in truffle oil and melted butter.
- Coat each hen with the herb butter mixture and place them on top of the vegetables. Pour chicken stock and white wine around them.
- Bake for 55-65 minutes until the internal temperature reaches 165°F (74°C).
- Remove from oven and let the hens rest for 10-20 minutes before serving.
