  • 1.5 lbs Cornish Hens About 1-½ lbs each
  • 1 whole Lemon Cut into quarters
For the Vegetables
  • 1-2 medium Yellow Onions Quartered
  • 3 whole Carrots Peeled and chopped
  • 1 lbs Baby Gold Yukon Potatoes Halved
For the Herb Butter Mixture
  • 1 bunch Fresh Rosemary
  • 1 bunch Fresh Thyme
  • 1 tbsp Minced Rosemary
  • 1 tbsp Minced Tarragon
  • 10 sprigs Thyme Sprigs
  • 6 cloves Minced Garlic
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
For the Flavor Boost
  • Cracked Black Pepper To taste
  • 2 tbsp Truffle Oil Olive oil can be substituted
  • 4 tbsp Unsalted Butter Melted
For Moisture and Flavor
  • 0.5 cup Chicken Stock
  • 0.5 cup White Wine

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Prepare a roasting pan.
  2. Rinse the Cornish hens under cold water and pat them dry. Tuck the wings back and tie the drumsticks.
  3. Line the pan with onions, carrots, and potatoes. Drizzle with olive oil and season with salt and pepper.
  4. Combine the herb mixture ingredients in a bowl. Slowly stir in truffle oil and melted butter.
  5. Coat each hen with the herb butter mixture and place them on top of the vegetables. Pour chicken stock and white wine around them.
  6. Bake for 55-65 minutes until the internal temperature reaches 165°F (74°C).
  7. Remove from oven and let the hens rest for 10-20 minutes before serving.
