  • Minced garlic 2 cloves
  • Dijon mustard or dry mustard 3 teaspoons or 1 teaspoon
  • Kosher salt 1/2 teaspoon
  • Black pepper 1/2 teaspoon
  • Grated Pecorino Romano or Parmesan cheese 1/3 cup
  • Iceberg lettuce shredded (1 head, about 5-6 cups)
  • Romaine lettuce shredded (1 head, about 4-5 cups)
  • Chickpeas drained and rinsed (1 15-ounce can)
  • Italian salami thinly sliced (1/4 lb or 4 ounces)
  • Shredded mozzarella cheese 2 cups

Method
 

  1. Whip Up the Dressing
  2. In a small bowl or jar, combine olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, black pepper, and Pecorino Romano cheese.
  3. Whisk or shake well until fully blended.
  4. Assemble the Salad
  5. In a large bowl, add shredded iceberg and romaine lettuce.
  6. Toss in chickpeas, thinly sliced Italian salami, and shredded mozzarella cheese.
  7. Toss and Serve
  8. Drizzle the prepared dressing over the salad.
  9. Toss everything together until well coated.
  10. Serve immediately and enjoy the fresh, tangy flavors!
