Whip Up the Dough:
- Preheat oven to 375°F.
- In a large bowl, cream together the shortening and confectioners’ sugar until light and fluffy (about 3–4 minutes).
- Beat in the egg and peppermint extract.
- Gradually add the flour and salt, mixing well.
- Tint the dough with green food coloring.
- Cover and refrigerate for one hour or until firm enough to handle.
Shape the Lucky Clovers:
- On a lightly floured surface, roll out the dough to ¼-inch thickness.
- Use a 2-inch shamrock-shaped cookie cutter to cut out the cookies.
- Place cookies 1 inch apart on ungreased baking sheets.
- If desired, sprinkle with green colored sugar for an extra festive touch.
Bake to Perfection:
- Bake for 10–12 minutes or until the edges are lightly browned.
- Let the cookies cool on the baking sheet for 1 minute before transferring to wire racks to cool completely.
Notes
- Chilling the dough ensures a firmer texture and better shape retention while baking.
- If you don’t have green paste food coloring, gel food coloring also works well.
- Store cookies in an airtight container at room temperature for up to one week.
- For extra crunch, roll the dough in granulated sugar before baking.
