Ingredients
  

  • 1 tablespoon olive oil
  • ½ white onion diced
  • 1 stalk celery chopped
  • ½ cup shredded carrots
  • 2 teaspoons minced garlic
  • 4 cups low-sodium chicken broth
  • 3 cooked boneless skinless chicken breasts, diced
  • 1 teaspoon thyme
  • 16 oz potato gnocchi
  • 2 cups half and half
  • 1 cup fresh spinach roughly chopped
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onions, celery, and carrots for 3-5 minutes until softened.
  3. Add garlic and cook for another 30 seconds until fragrant.
  4. Pour in chicken broth and bring to a gentle simmer.
  5. Stir in chicken and thyme, simmering for 5-10 minutes.
  6. Add gnocchi and cook for 2-4 minutes until tender.
  7. Reduce heat and stir in half and half, followed by chopped spinach.
  8. Season with salt and pepper to taste.
  9. Serve warm and enjoy!

Notes

  • Use rotisserie chicken to save time.
  • Want it thicker? Add 1 tablespoon cornstarch mixed with water.
  • Make it dairy-free by swapping half-and-half for coconut milk.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
