Ingredients

  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 teaspoon white vinegar
  • 1/2 teaspoon ground mustard or Dijon mustard
  • 1/4 teaspoon salt
  • 1 cup avocado oil or vegetable/light olive oil
  •

Method

  1. Gather Equipment
  2. Use an immersion blender and a tall, narrow container (like a mason jar) for the best results.
  3. Blend the Base Ingredients
  4. Add the egg, lemon juice, vinegar, mustard, and salt to the container. Blend until smooth.
  5. Emulsify the Oil
  6. With the blender running, slowly drizzle in the avocado oil. Gradually adding the oil ensures a thick and creamy consistency. Blend until the mixture reaches a mayonnaise-like texture.
  7. Taste and Adjust
  8. Taste your aioli and adjust the seasoning with additional salt or lemon juice as desired. Blend briefly to incorporate any changes.
  9. Store and Use
  10. Transfer the aioli to an airtight container and refrigerate. It’s best enjoyed within a week.

Notes

  • Ensure all ingredients are at room temperature to help the emulsion form properly.
  • Experiment with flavors by adding minced garlic, smoked paprika, or fresh herbs for a personalized twist.
  • If the aioli separates, fix it by blending a new egg yolk and slowly adding the broken mixture to re-emulsify.
