Ingredients
  

  • 2 tablespoons olive oil divided
  • 4 boneless skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon cornstarch optional, for thickening
  • 2 tablespoons water if using cornstarch
  • Fresh parsley chopped (for garnish)

Method
 

Prepare the Chicken:
  1. Season chicken breasts with salt, pepper, and paprika on both sides.
Sear the Chicken:
  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add chicken and cook for 4-5 minutes on each side, or until golden brown. Remove and set aside.
Make the Sauce:
  1. In the same skillet, add the remaining 1 tablespoon olive oil. Stir in garlic and sauté for 1 minute until fragrant.
  2. Mix honey, Dijon mustard, and soy sauce in a small bowl. Pour the mixture into the skillet and simmer for 2 minutes, stirring occasionally.
Combine Chicken and Sauce:
  1. Return the chicken to the skillet, spooning the sauce over the top. Reduce heat to low, cover, and cook for 10-12 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
Optional Thickening:
  1. If you prefer a thicker sauce, mix cornstarch and water in a small bowl and stir into the skillet. Cook for an additional 1-2 minutes until the sauce thickens.
Garnish and Serve:
  1. Sprinkle chopped parsley over the chicken before serving. Pair with your favorite sides like mashed potatoes or steamed vegetables for a complete meal.
