  • 1 pound large shrimp peeled and deveined
  • 8 slices bacon cut in half
  • 1/4 cup brown sugar
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish (optional)

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with aluminum foil and place a wire rack on top.
  2. In a small bowl, mix together the brown sugar, chili powder, garlic powder, cayenne pepper, black pepper, and salt.
  3. Wrap each shrimp with a half slice of bacon and secure it with a toothpick. Place the wrapped shrimp on the wire rack.
  4. Brush the bacon-wrapped shrimp with olive oil and sprinkle the brown sugar mixture evenly over each piece.
  5. Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and the shrimp are cooked through. For extra crispiness, broil for an additional 2-3 minutes at the end.
  6. In a small bowl, whisk together the honey and lime juice. Drizzle this mixture over the shrimp before serving.
  7. Garnish with fresh cilantro if desired.
