For the Rice

  • ½ teaspoon sesame seeds optional, for garnish

Method
 

  1. Step 1: Sear the Chicken
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season the chicken with salt, pepper, and garlic powder.
  4. Cook until golden brown and fully cooked (about 5-7 minutes). Remove and set aside.
Step 2: Create the Pineapple Glaze
  1. In the same pan, add pineapple chunks, pineapple juice, soy sauce, honey, rice vinegar, ginger, and garlic.
  2. Bring to a gentle simmer for about 3 minutes.
  3. Stir in the cornstarch slurry and let the sauce thicken (about 1-2 minutes).
Step 3: Toss Everything Together
  1. Return the cooked chicken to the skillet and coat it evenly in the sauce.

  1. In a separate pan, melt butter over medium heat.
