Method
Preheat the Oven:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
Make the Dough:
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
Combine Dry Ingredients:
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
Shape the Cookies:
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten each ball with your fingers or the back of a spoon.
Add the Jam:
- Create a small indent in the center of each cookie using your thumb or a spoon. Fill the indent with a small amount of strawberry jam.
Bake:
- Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar, strawberry jam, and milk until smooth and pourable.
Glaze the Cookies:
- Once the cookies are completely cooled, drizzle the glaze over them using a spoon or piping bag. Allow the glaze to set before serving.
Notes
- Choose Quality Jam: Opt for a high-quality strawberry jam with real fruit pieces for the best flavor.
- Customize the Glaze: Add a few drops of pink or red food coloring to the glaze for an extra pop of color.
- Storage: Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
