Ingredients
  

  • ¼ cup rolled oats or quick oats1 tablespoon chia seeds1 scoop vanilla or sugar cookie flavored protein powder1 tablespoon sugar-free cheesecake pudding mix not gluten-free¾ cup unsweetened almond milk or milk of choice⅔ cup 0% Greek yogurt or Skyr1 tablespoon lemon juice, fresh or bottled¼ to ½ cup frozen or fresh strawberriesOptional garnish: crushed graham crackers or sugar-free strawberry jam

Method
 

  1. In a mason jar or airtight container, add oats, chia seeds, protein powder, pudding mix, almond milk, yogurt, and lemon juice.
  2. Stir thoroughly until fully combined, making sure to scrape down the sides to mix in the chia seeds and powder.
  3. Fold in frozen or fresh strawberries.
  4. Seal with a lid and refrigerate overnight (at least 4–6 hours).
  5. Before serving, top with crushed graham crackers or a swirl of strawberry jam, if desired.

  7. Enjoy cold straight from the jar or let it sit at room temperature for a few minutes to soften slightly.

Notes

    • To make it more dessert-like, layer oats with a strawberry compote or use flavored Greek yogurt.
    • You can also use a mini cheesecake crust at the bottom (graham cracker crumbs + a touch of melted butter).
    • Top with white chocolate shavings, a drizzle of honey, or dark chocolate chips for extra decadence.
