In a large mixing bowl, combine the rolled oats, milk, Greek yogurt, honey or maple syrup, vanilla extract, and salt. Stir until well combined.
Gently fold in the sliced strawberries, reserving a few for topping.
Divide the mixture evenly into four jars or containers with lids.
Seal the containers and refrigerate overnight (or for at least 4 hours) to allow the oats to soften and absorb the liquid.
In the morning, give the oats a good stir and top with the reserved strawberries before serving. Enjoy cold or warm them up in the microwave if desired.
