Cook the Noodles
Boil water and cook rice noodles according to package instructions.
Drain, rinse under cold water, and toss with a little sesame oil to prevent sticking.
Make the Sauce
In a small bowl, whisk together hoisin sauce, soy sauce, oyster sauce, and sesame oil. Set aside.
Cook the Beef & Vegetables
Heat vegetable oil in a large pan over medium-high heat.
Sear beef slices for 1-2 minutes per side until just browned. Remove from the pan.
In the same pan, stir-fry garlic, ginger, bell pepper, and carrot for 2 minutes.
Combine Everything
Return beef to the pan and pour in the sticky hoisin sauce.
Add the cooked noodles and toss everything together until evenly coated.
Garnish & Serve
Sprinkle with green onions, sesame seeds, and fresh cilantro.
Serve immediately and enjoy!
