Method
 

Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C) and spray silicone cupcake mold with cooking spray.
  2. Finely chop the red bell pepper and spinach, setting aside.
  3. Blend egg whites, cottage cheese, and mozzarella in a blender for about 60 seconds until frothy.
  4. Place the silicone mold on a baking sheet. Sprinkle in the chopped veggies, then pour the egg mixture into each cup until ¾ full.
  5. Pour boiling water into the baking sheet until halfway up the sides of the mold.
  6. Bake for 30 to 35 minutes until tops are firm and slightly puffed, with a slight jiggle.
  7. Let cool for 5 minutes before removing from the mold and serve warm.

Notes
