Preheat the oven to 400°F. Line a baking sheet with parchment paper.
In a mixing bowl, combine the chopped spinach, crumbled feta cheese, softened cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Roll out the thawed puff pastry on a lightly floured surface to smooth out any creases. Cut the pastry into strips about 1 inch wide and 6 inches long.
Place a spoonful of the spinach and feta mixture at one end of each pastry strip. Fold the pastry over the filling and twist it to create a spiral shape. Place the twists on the prepared baking sheet.
Brush the tops of the twists with the beaten egg and sprinkle with sesame seeds if desired.
Bake in the preheated oven for 15-20 minutes or until golden brown and puffed. Remove from the oven and let cool slightly before serving.
