  • 3 tbsp Seasoned Rice Vinegar Adjust to taste
For the Tuna Mixture
  • 2 cans Canned Tuna Drained
  • 1/2 cup Mayonnaise Use Kewpie for more flavor
  • 2 tbsp Sriracha Sauce Adjust based on heat preference
  • 1 tbsp Toasted Sesame Oil Optional, but recommended
For Freshness and Garnish
  • 1 medium Persian Cucumber Sliced
  • 2 tbsp Green Scallions Finely chopped
  • 2 tbsp Toasted Black and White Sesame Seeds Optional for garnish

Method
 

Instructions
  1. Start by steaming the cauliflower rice until it becomes tender, approximately 5-7 minutes.
  2. Divide the seasoned cauliflower rice into each meal prep container.
  3. In a large mixing bowl, combine mayonnaise, sriracha sauce, and toasted sesame oil until smooth.
  4. Gently fold in the drained tuna until coated.
  5. Scoop the tuna mixture over the portioned cauliflower rice in each container.
  6. Slice the Persian cucumber and place them atop the tuna mixture.
  7. Sprinkle each bowl with sesame seeds and chopped scallions.
  8. Cover and store in the refrigerator for up to 3 days.
