Method
- Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
- In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is soft. Drain any excess fat.
- Stir in the diced tomatoes with green chilies, both soups, corn, black beans, sour cream, and seasonings (garlic powder, chili powder, cumin, salt, and pepper). Mix well.
- Layer half of the crushed tortilla chips in the bottom of the prepared baking dish.
- Pour the beef and vegetable mixture over the chips and spread evenly.
- Top with the remaining chips and sprinkle the shredded cheese evenly on top.
- Bake in the preheated oven for 25 to 30 minutes, or until the cheese is melted and bubbly.
- Let it cool slightly before serving. Garnish with fresh cilantro and an optional dollop of sour cream.
Notes
You can swap out the ground beef for ground turkey or chicken if preferred.
