For the Chicken
  • 1.5 lbs Organic Chicken Breast
  • 1-2 Tbsps Jerk Dry Rub Seasoning Enhances flavor with Caribbean spices
For the Pasta
  • 16 oz Short-Cut Pasta Opt for gluten-free if needed
  • 1 Tbsp Extra Virgin Olive Oil
For the Sauce
  • 4 cloves Garlic Minced
  • 2 Bell Peppers Chopped, use red and yellow for color
  • 2-3 sprigs Fresh Thyme Use dried if fresh isn't available
  • 2 Tbsps Organic All-Purpose Flour Can be replaced with gluten-free flour
  • 1 tsp Smoked Paprika
  • 1 Scotch Bonnet Pepper Minced or whole with a slit for optional heat
  • 1.5 cups Organic Heavy Cream Substitute coconut cream for a dairy-free option
  • 2 cups Organic Chicken Stock/Broth Vegetable stock can be used
  • 2 Tbsps White Cooking Apple Vinegar
  • 1 cup Freshly-Grated Parmesan Cheese Use cheddar as a substitute if desired

Method
 

Steps
  1. Cut the organic chicken breast into bite-sized chunks and coat with jerk dry rub seasoning. Let rest for 15 minutes.
  2. Bring salted water to a boil, add pasta, and cook until al dente (8-10 minutes). Drain and toss with olive oil.
  3. In a skillet, heat olive oil and sauté minced garlic for 1 minute until fragrant.
  4. Add chopped bell peppers and fresh thyme, cooking for 3-4 minutes until tender.
  5. Add seasoned chicken chunks and cook for 6-8 minutes until golden brown and cooked through.
  6. Sprinkle smoked paprika and more jerk seasoning, stirring to combine and cook for 1 more minute.
  7. Dust with flour and gradually pour in heavy cream and chicken stock, stirring constantly. Simmer for 5-7 minutes until thickened.
  8. Fold in cooked pasta and mix gently, adjusting seasoning as necessary.
  9. Stir in Parmesan cheese until melted and creamy. Add minced or slitted scotch bonnet pepper for heat if desired.
