Ingredients
  

  • 1 pound ground beef
  • 1 cup crushed tortilla chips
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cream cheese softened
  • 1/4 cup diced jalapeños fresh or pickled
  • 1/4 cup chopped green onions
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup for topping
  • 1/2 cup ranch dressing for drizzle
  • 1 tablespoon hot sauce adjust to taste

Method
 

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, crushed tortilla chips, cheddar cheese, cream cheese, diced jalapeños, green onions, egg, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.
  3. Transfer the meat mixture to a loaf pan and shape it into a loaf.
  4. Spread the ketchup evenly over the top of the meatloaf.
  5. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F.
  6. While the meatloaf is baking, prepare the creamy ranch drizzle by mixing the ranch dressing and hot sauce in a small bowl. Adjust the amount of hot sauce to your preferred spice level.
  7. Once the meatloaf is cooked, remove it from the oven and let it rest for 10 minutes before slicing.
  8. Drizzle the creamy ranch sauce over each slice before serving.
