Servings: 8 burritos
Course: Main Course
Cuisine: Mexican

Ingredients

For the Burritos:
  • 8 large burrito flour or wheat tortillas
  • 4 cups shredded iceberg lettuce
  • cups diced Roma slicing, or vine tomatoes
  • 1 lb grilled chicken cubed or shredded
  • 2 cups shredded Mexican/fiesta style or cheddar cheese
  • 1 large Hass avocado diced
  • 3 oz crunchy tortilla chips optional
  • Avocado ranch dressing for serving
  • Chipotle ranch dressing for serving
Optional Sides:
  • Cilantro lime or cantina rice as needed
  • Mexican style black beans as needed

Method

Prepare the Tortillas:
  1. Heat a dry skillet over medium-low heat. Warm each tortilla for a few seconds on each side until they become soft and pliable.
Assemble the Burritos:
  1. Divide the ingredients among the 8 tortillas. Spoon about ½ cup of shredded lettuce, ⅓ cup of grilled chicken, ¼ cup of shredded cheese, 3 tablespoons of diced tomatoes, and ⅛ of a diced avocado onto the center of each tortilla.
  2. Sprinkle a few crunchy tortilla chips on top of the fillings, and drizzle with 1 tablespoon each of chipotle ranch and avocado ranch dressing.
Roll the Burritos:
  1. Fold the sides of the tortilla inward over the fillings. Roll the tortilla tightly from the bottom up to form a burrito. Ensure that the burrito is well-sealed.
Grill the Burritos:
  1. Lightly mist a frying pan with cooking spray and heat it over medium heat.
  2. Place the burritos seam-side down in the pan. Cook for a few minutes on each side until the tortillas are golden and toasted. You may need to do this in batches.
Serve and Enjoy:
  1. Remove the burritos from the pan and let them cool for a minute.
  2. Serve the burritos with a side of cilantro lime rice or cantina rice and Mexican style black beans for a complete meal.
  3. Drizzle extra avocado or chipotle ranch dressing on top if desired.

Notes

  • Fresh Ingredients: Use fresh, high-quality ingredients for the best flavor and texture.
  • Control the Spice: Adjust the amount of chipotle ranch dressing to control the heat level.
  • Make Ahead: Assemble the burritos in advance and store them in the refrigerator for easy grilling later.
