Method
Prepare the Tortillas:
- Heat a dry skillet over medium-low heat. Warm each tortilla for a few seconds on each side until they become soft and pliable.
Assemble the Burritos:
- Divide the ingredients among the 8 tortillas. Spoon about ½ cup of shredded lettuce, ⅓ cup of grilled chicken, ¼ cup of shredded cheese, 3 tablespoons of diced tomatoes, and ⅛ of a diced avocado onto the center of each tortilla.
- Sprinkle a few crunchy tortilla chips on top of the fillings, and drizzle with 1 tablespoon each of chipotle ranch and avocado ranch dressing.
Roll the Burritos:
- Fold the sides of the tortilla inward over the fillings. Roll the tortilla tightly from the bottom up to form a burrito. Ensure that the burrito is well-sealed.
Grill the Burritos:
- Lightly mist a frying pan with cooking spray and heat it over medium heat.
- Place the burritos seam-side down in the pan. Cook for a few minutes on each side until the tortillas are golden and toasted. You may need to do this in batches.
Serve and Enjoy:
- Remove the burritos from the pan and let them cool for a minute.
- Serve the burritos with a side of cilantro lime rice or cantina rice and Mexican style black beans for a complete meal.
- Drizzle extra avocado or chipotle ranch dressing on top if desired.
