  • 1 cup onions (diced) Red or green onions.

For the Dressing
  • 3 cloves garlic (pressed) Fresh is recommended.
  • 1/2 cup Vegenaise Can substitute with vegan mayonnaise.
  • 1 tablespoon Southwest seasoning Homemade or store-bought.

Step-by-Step Instructions
  1. Cook the gluten-free pasta according to package directions in salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine black beans, corn, diced onions, and chopped bell pepper. Stir gently until evenly mixed.
  3. Once cooled, add the pasta to the vegetable mixture, folding gently to combine without wilting the veggies.
  4. Make the dressing by whisking together pressed garlic, Vegenaise, and Southwest seasoning in a separate bowl until smooth.
  5. Drizzle the dressing over the pasta and veggie mixture, gently tossing to coat thoroughly.
  6. Taste and adjust seasoning with salt, pepper, or additional Southwest seasoning as desired. Serve immediately or chill for 30 minutes.
