Step-by-Step Instructions for Slow Cooker Chicken Adobo
  1. In a large skillet, heat a tablespoon of oil over medium-high heat. Sear the chicken thighs, skin-side down, for 3-4 minutes until golden. Flip and sear the other side for an additional 3-4 minutes.
  2. Layer the smashed garlic, peppercorns, and bay leaves at the bottom of the slow cooker.
  3. Place the seared chicken thighs on top of the aromatics.
  4. Whisk together soy sauce, vinegar, water, and brown sugar. Pour over the chicken.
  5. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  6. Remove chicken and simmer the braising liquid for about 10 minutes to reduce.
  7. Return the thickened sauce to the chicken and serve with fluffy jasmine rice.
