Ingredients
  

Cheesy Goodness:
  • 3/4 cup part-skim cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley plus more for garnish
  • 3/4 cup part-skim shredded mozzarella cheese
Savory Meat & Seasonings:
  • 1/2 pound 93% lean ground beef
  • 1/2 teaspoon kosher salt
  • 1/2 tablespoon olive oil
  • 1/2 medium yellow onion diced
  • 3 cloves garlic chopped
Rich Tomato Base:
  • 2 1/2 cups crushed tomatoes
  • 2 1/2 cups chicken bone broth
  • 1/4 cup fresh basil chopped
Pasta Perfection:
  • 8 ounces pasta Mafalda, Campanelle, bow-tie, broken lasagna noodles, or gluten-free pasta

Method
 

  1. Prepare the Cheese Mixture – In a small bowl, mix cottage cheese, Parmesan, and parsley. Set aside.
  2. Cook the Beef – Heat a 12-inch oven-safe skillet over high heat. Add ground beef and salt, breaking it up as it browns (about 5 minutes).
  3. Sauté Aromatics – Add diced onion and chopped garlic. Sauté until tender (4–5 minutes).
  4. Make the Sauce – Pour in crushed tomatoes and bone broth. Stir in basil and bring to a simmer.
  5. Cook the Pasta – Add pasta, ensuring it is submerged. Cover and simmer on medium heat, stirring occasionally, for 18–20 minutes until tender.
  6. Broil the Cheese – Remove from heat. Dollop the cheese mixture on top (do not stir). Sprinkle mozzarella over it. Broil on high for 3 minutes until melted and golden.
  7. Garnish & Serve – Remove from oven, sprinkle extra parsley, and serve hot.

Notes

  • Use gluten-free pasta if needed.
  • Swap ground beef for turkey or plant-based meat for a variation.
  • Adjust salt and seasonings to taste.
