Ingredients
  

For the Chicken:
  • 4 boneless skinless chicken breasts or thighs
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
For the Potatoes:
  • 1.5 lbs baby Yukon Gold or red potatoes halved
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Optional Garnish:
  • 1 tablespoon fresh parsley chopped

Method
 

Preheat the Oven:
  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or lightly grease it.
2. Prepare the Chicken:
  1. Pat the chicken dry with paper towels.
  2. In a small bowl, mix Italian seasoning, smoked paprika, salt, and black pepper.
  3. Rub olive oil over the chicken and coat evenly with the seasoning mixture.
3. Season the Potatoes:
  1. In a large bowl, toss the halved potatoes with olive oil, minced garlic, Parmesan cheese, salt, and black pepper.
  2. Ensure all the potatoes are evenly coated for maximum flavor and crispiness.
4. Assemble on the Baking Sheet:
  1. Place the seasoned chicken on one side of the baking sheet.
  2. Spread the potatoes on the other side, arranging them in a single layer to ensure even cooking.
5. Roast the Chicken and Potatoes:
  1. Roast in the preheated oven for 25-30 minutes.
  2. Flip the potatoes halfway through cooking for even crispiness.
  3. Ensure the chicken reaches an internal temperature of 165°F (74°C) using a meat thermometer.
6. Add the Final Touch:
  1. In the last 5 minutes of roasting, sprinkle additional Parmesan cheese over the chicken and potatoes.
  2. Switch the oven to broil and cook until the cheese turns golden and forms a crispy crust.
7. Garnish and Serve:
  1. Remove from the oven and garnish with freshly chopped parsley.
