Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add 1 pound of lean ground beef, breaking it apart with a spatula. Cook for 6-8 minutes until browned.
  2. Stir in 2 tablespoons of taco seasoning and 1/4 cup of water. Reduce heat to medium-low and simmer for 3-5 minutes until the sauce thickens slightly.
  3. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  4. Spread half of the corn tortilla chips evenly across the prepared baking sheet. Sprinkle half of the Monterey Jack and sharp cheddar cheese over the chips.
  5. Evenly distribute the seasoned ground beef over the first layer of cheese.
  6. Top with the remaining corn tortilla chips and sprinkle the rest of the cheese on top.
  7. Bake in the preheated oven for 7-10 minutes, watching for the cheese to bubble and become slightly golden.
  8. Remove from the oven and top with diced cherry tomatoes, red onion, and sliced jalapeños. Serve with lime wedges.
