  • 1 whole Rotisserie Chicken or grilled/baked chicken
  • 3 pieces Pita Bread cut into small squares
  • ½ cup Vegetable Oil for frying
  • 3 cups Cooked Rice white or brown rice
For the Sauce
  • 2 cloves Garlic mashed
  • 2 cups Plain Yogurt or Greek yogurt
  • ¼ cup Tahini or sunflower seed butter
  • 1 whole Lime Juice fresh
  • Salt and Pepper to taste
  • ½ tsp Cinnamon optional
Garnish
  • ½ cup Toasted Sliced Almonds or pistachios/pine nuts
  • Chopped Parsley for freshness

Method
 

Cooking Steps
  1. In a deep pan, heat about ½ inch of vegetable oil over medium heat until shimmering, around 350°F (175°C). Add pita squares in batches, frying for 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.
  2. In a mixing bowl, combine mashed garlic, plain yogurt, tahini, and lime juice. Whisk together for 1-2 minutes until smooth. Season with salt, pepper, and optional cinnamon.
  3. In a large serving dish, layer 3 cups of cooked rice as the base, then add shredded rotisserie chicken followed by crispy fried pita pieces.
  4. Drizzle the garlic-yogurt-tahini sauce generously over the assembled layers.
  5. Sprinkle toasted sliced almonds and chopped parsley on top before serving.
