Ingredients
  

For the Pastry Rolls:
  • Puff pastry sheet 1, 250 g
  • Baby spinach 7 oz/200 g
  • Garlic minced (2 cloves)
  • Olive oil 1 tablespoon
  • Ricotta cheese 7 oz/200 g
  • Grated Parmesan cheese 2 tablespoons
  • Egg 1
  • Egg yolk 1
  • Salt 1 pinch
  • Black pepper 1 pinch
  • Sesame seeds 1 tablespoon

Method
 

 Prepare the Ingredients
  1. Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. Heat olive oil in a pan over medium heat. Sauté minced garlic for 2 minutes until softened.
  3. Add baby spinach to the pan, season with salt and pepper, and cook until wilted. Remove from heat and let cool.
2. Make the Filling
  1. In a mixing bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, and one egg.
  2. Season with a pinch of salt and pepper, and mix until evenly combined.
3. Prepare the Puff Pastry
  1. Roll out the puff pastry sheet on a floured surface and cut into 6 or 12 equal squares, depending on your desired size.
  2. Place the squares on the prepared baking tray.
4. Assemble the Pastry Rolls
  1. Spoon a portion of the spinach mixture into the center of each pastry square.
  2. Fold two opposite corners of the square over the filling, pressing them together to seal.
5. Brush and Garnish
  1. Lightly brush each pastry roll with egg yolk for a golden, shiny finish.
  2. Sprinkle sesame seeds on top for added texture and flavor.
6. Bake to Perfection
  1. Place the tray in the preheated oven and bake for 25-35 minutes or until the pastry is puffed and golden brown.
  2. Remove from the oven and let cool slightly before serving.

Notes

  • Alternative Fillings: Experiment with mushrooms, caramelized onions, or feta cheese for a new twist.
  • Make Ahead: Assemble the rolls and refrigerate them covered until ready to bake.
