Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and cut cauliflower into evenly sized florets.
  2. In a large mixing bowl, toss cauliflower florets with oil or fat-free spray until coated.
  3. Add milk, cornmeal, and salt to the bowl and toss until cauliflower is evenly coated.
  4. Spread the cauliflower on the prepared baking sheet in a single layer and bake for 35-40 minutes, flipping halfway.
  5. While roasting, combine pineapple juice, vinegar, garlic, ginger, and salt in a saucepan. Whisk in cornstarch until smooth.
  6. Cook the sauce over medium heat, stirring until thickened (about 3-5 minutes).
  7. Combine roasted cauliflower with sauce in a large bowl and serve hot, optionally in hollowed-out pineapple.
