Ingredients
  

  • 1 lb lean ground beef
  • 1/2 cup yellow onion diced
  • 1 medium Yukon gold potato 1 1/2 cups, chopped
  • 2 cups carrots chopped (about 3 large)
  • 2 cloves garlic minced
  • 2 tsp Italian seasoning
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 can 14 oz fire-roasted diced tomatoes
  • 2 Tbsp tomato paste
  • 1 Tbsp Worcestershire sauce
  • 2 cups beef broth
  • 1/2 tsp granulated sugar
  • 1 bay leaf
  • 3/4 cup frozen peas

Method
 

  1. Cook the Ground Beef
  2. In a large pot over medium-high heat, brown the ground beef, breaking it into crumbles as it cooks. Drain excess grease.
  3. Sauté Aromatics
  4. Add diced onion and minced garlic to the pot. Stir and cook for about 2 minutes, until the onion softens and the garlic is fragrant.
  5. Season and Add Vegetables
  6. Stir in Italian seasoning, onion powder, salt, and black pepper. Add the chopped potatoes and carrots, stirring to coat them in the seasoning.
  7. Build the Broth
  8. Add fire-roasted diced tomatoes (with juices), tomato paste, beef broth, Worcestershire sauce, granulated sugar, and the bay leaf. Mix well.
  9. Simmer the Stew
  10. Cover the pot, reduce heat to low, and let the stew simmer for 20 minutes until the vegetables are tender and flavors meld together.
  11. Final Touches
  12. Stir in frozen peas and cook for another 5 minutes. Remove the bay leaf, taste, and adjust seasonings if needed. Serve hot.
