Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them sit for about 15 minutes to absorb the flavors.
In a separate bowl, toss the halved baby potatoes with a little olive oil, salt, and pepper until evenly coated.
Arrange the marinated chicken thighs on a large baking sheet, skin side up. Scatter the seasoned potatoes around the chicken.
Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy, and the potatoes are tender.
For extra crispiness, broil for an additional 2-3 minutes at the end of cooking.
Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley.
