  • 1 pound baby potatoes halved
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper. Mix well to create a marinade.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them sit for about 15 minutes to absorb the flavors.
  4. In a separate bowl, toss the halved baby potatoes with a little olive oil, salt, and pepper until evenly coated.
  5. Arrange the marinated chicken thighs on a large baking sheet, skin side up. Scatter the seasoned potatoes around the chicken.
  6. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy, and the potatoes are tender.
  7. For extra crispiness, broil for an additional 2-3 minutes at the end of cooking.
  8. Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley.
