  • 1 pound breakfast sausage pork or turkey
  • 1 cup diced bell peppers any color
  • 1 cup diced onion
  • 1 cup cooked brown rice
  • 4 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup shredded cheddar cheese optional
  • Fresh parsley for garnish optional

Method
 

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and bell peppers, cooking until softened, about 5 minutes.
  2. Add the breakfast sausage to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 7-10 minutes.
  3. Stir in the cooked brown rice, garlic powder, onion powder, salt, and pepper. Mix well and cook for an additional 2-3 minutes until heated through.
  4. In a separate skillet, scramble the eggs over medium heat until fully cooked, about 3-4 minutes. Season with salt and pepper.
  5. To serve, divide the sausage and rice mixture into bowls, top with scrambled eggs, and sprinkle with shredded cheddar cheese and fresh parsley if desired.
