  • 1 pound boneless, skinless chicken thighs for juicier result
  • 2 stalks lemongrass freshly minced
  • 3 cloves garlic fresh
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar or honey/maple syrup
  • 2 tablespoons lime juice fresh
For the Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup water adjust for consistency
  • 1 clove garlic minced
For Assembly

Method
 

Preparation
  1. Cut the chicken thighs into bite-sized pieces and place them in a bowl.
  2. In another bowl, mix together minced lemongrass, minced garlic, soy sauce, brown sugar, and lime juice.
  3. Pour the marinade over the chicken and coat well. Cover and marinate in the refrigerator for at least 30 minutes.
  4. Prepare skewers, soaking wooden ones if used.
  5. Thread marinated chicken onto the skewers, leaving space between pieces.
Cooking
  1. Preheat grill or oven to 400°F (200°C).
  2. Grill skewers for 15-20 minutes, flipping halfway through.
  3. If using an oven, place on a baking sheet and cook until chicken reaches 165°F (74°C).
Peanut Sauce
  1. In a mixing bowl, combine peanut butter, lime juice, soy sauce, water, and minced garlic.
  2. Whisk until smooth, adjusting water as needed.
Serving
  1. Let skewers rest for a few minutes after cooking.
  2. Serve warm with peanut sauce drizzled on top.
